At F.X. Buckley Steakhouse, It’s All About the Beef
The Buckley family knows beef. Their family grew in the meat marketing business over six generations, starting with a butcher shop.
Now, they provide their expertise to their restaurant customers. They also developed a knowledge of wines that they use in their restaurants. This makes a great experience for their customers.
It’s All About the Beef
The Buckley family chooses Angus and Hereford beef from Ireland that are grass fed for at least two years creating flavour and building up the marbling. They select heifers for more tender and succulent beef.
The meat is then dry-aged for 28 days in a meat locker to improve the flavour. Dry-aging reduces the weight of the beef by 20 percent.
Then, their butcher cuts the meat to your order, and they cook it at 350 degrees in a high-temperature charcoal oven. The cooking method seals in flavour and juiciness.
Finally, they let your steak rest for five minutes before serving it so the juices don’t escape.
